Rosemary Christmas Tree Bread

Equipment:
Stand mixer with a dough hook attachment
Ingredients:
350g bread flour
10g yeast
10g salt
190g water
10g rosemary
50g whole baby tomato
Olive oil
Method:
1. In a stand mixer with a dough hook attachment knead your flour, yeast, salt, and water until the dough becomes smooth. This should take about 10 mins.
2. Once your dough is smooth, shape into a ball, cover and leave to proof until double in size. This will take between 1 and 2 hours.
3. Once proofed, punch down.
4. Place your dough on a lined baking tray, pour over some olive oil and flatten your dough out to the shape of the pan by just using your hands.
5. Place your dough in a cold oven with the door closed, allow to proof until double in size.
6. To decorate, take your rosemary and press into the dough in the shape of a Christmas Tree.
7. Punch in your tomatoes to be the babuls.
8. Pour over more olive oil and bake in a preheated oven of 200C for 20 mins, or until brown.
9. Take out of the oven and allow to cool.
